Quick Vegan Chocolate Pudding from Scratch

Who hasn't been there? You are sitting comfortably on the couch in the evening and suddenly have a craving for something sweet. But the last chocolate bar unfortunately already had to serve as an afternoon snack and now baking a cake just takes too long. So something quick has to be made, with just a few ingredients that you actually always have at home. The magic answer is: CHOCOLATE PUDDING! And the best part is that you need exactly four ingredients: Plant milk, starch, baking cocoa and a sweetener of your choice. If you want a little more luxury, you can of course spice up the pudding with toppings as you please. For example, nuts, cornflakes, chocolate shavings, sugar pearls, nut puree and so on... There are no limits to your imagination.

For 2 servings you need:


For the pudding:

  • 500ml plant milk of your choice

  • 3 heaped tbsp. starch

  • 2 tbsp. baking cocoa

  • sweetener to taste

Optional:

  • some ground vanilla bean or vanilla sugar

  • Toppings of your choice

Preparation:

  1. Pour some of the plant milk into a shaker and add the cocoa powder and starch.

  2. Shake the whole thing well.

  3. Pour the rest of the milk into a saucepan (optionally add the vanilla at this point) and heat, stirring occasionally (danger of burning).

  4. When the milk starts to bubble, pour in the cocoa-starch mix, stirring constantly, and let the pudding simmer on low heat until it reaches the right consistency.

  5. Now you can sweeten the pudding and top it as you like.
