Quick Vegan Tofu Fricassee

Soft rice, creamy sauce and juicy tofu, sometimes it just has to be soul food!

This dish is done super easy and fast. And you usually have the ingredients for it at home. So a perfect meal when some hungry stomachs need to be filled quickly :D I am a real fan of smoked tofu. Also for this recipe, another package was needed. Here, however, you should choose a soft version, because it fits better to the consistency of the dish. If you don't like smoked tofu, you can of course also use plain tofu. There is really nothing more to say about this recipe, it impresses with its simplicity and finesse ;)
For 2 servings you need:
150g rice
200g smoked tofu
2 large carrots
150g green peas
1 package of vegan cooking cream
1 small onion
1 clove garlic
Vegan chicken seasoning, salt, pepper
Preparation:
Cook the rice in 1.5 times the amount of water. Do not salt it until the end of the cooking time.
Meanwhile, peel and dice the carrots, onion and garlic.
Press the tofu between two layers of kitchen paper and cut it into small cubes as well.
Heat some oil in a pan and sauté the onion and garlic.
When the onion is translucent, add the tofu, sprinkle it with salt and vegan chicken seasoning and fry it briefly.
Then add the carrots and fry them as well.
Then add the peas to the pan.
Pour in the vegan cream, season again with chicken seasoning, salt and pepper and let the fricassee simmer with the lid closed until the carrots are al dente (if the sauce is too thick, just add some water).
Taste everything again with spices and serve the tofu fricassee with the rice.
