Spaghetti with Vegan Spinach Sauce

Green, healthy and delicious! The perfect recipe for those who want something a little different than tomato sauce with their pasta.

Spaghetti with tomato sauce works every time - no doubt about that! But sometimes you want a little variety in the choice of sauces. This spinach sauce is an ideal alternative that is healthy, requires few ingredients and is prepared in no time. Plus, it brings back a childhood memory or two (or am I the only one who used to eat pasta with creamed spinach?).
So bring some green to your plate!
For 4 servings you need:
For the sauce:
400g spinach, frozen
200ml vegetable cream
1 onion
2 cloves garlic
2 tbsp. yeast flakes
salt, pepper, nutmeg
1 tbsp. oil
Other:
250g spaghetti
Preparation:
Defrost the spinach.
Cook the pasta according to package instructions.
Peel the onion and garlic and dice both.
Heat the oil in a pot and sauté the onion and garlic until translucent.
Add the spinach, season with salt, pepper and nutmeg and simmer for 5 minutes with the lid closed until soft.
Add the vegetable cream and blend everything into a creamy sauce.
Season again with salt, pepper, nutmeg and add the yeast flakes.
Drain the pasta and mix it with the spinach sauce.
