Spaghetti with Vegan Spinach Sauce

Spaghetti with tomato sauce works every time - no doubt about that! But sometimes you want a little variety in the choice of sauces. This spinach sauce is an ideal alternative that is healthy, requires few ingredients and is prepared in no time. Plus, it brings back a childhood memory or two (or am I the only one who used to eat pasta with creamed spinach?).

So bring some green to your plate!

For 4 servings you need:


For the sauce:

  • 400g spinach, frozen

  • 200ml vegetable cream

  • 1 onion

  • 2 cloves garlic

  • 2 tbsp. yeast flakes

  • salt, pepper, nutmeg

  • 1 tbsp. oil

Other:

  • 250g spaghetti

Preparation:

  1. Defrost the spinach.

  2. Cook the pasta according to package instructions.

  3. Peel the onion and garlic and dice both.

  4. Heat the oil in a pot and sauté the onion and garlic until translucent.

  5. Add the spinach, season with salt, pepper and nutmeg and simmer for 5 minutes with the lid closed until soft.

  6. Add the vegetable cream and blend everything into a creamy sauce.

  7. Season again with salt, pepper, nutmeg and add the yeast flakes.

  8. Drain the pasta and mix it with the spinach sauce.
