Vegan Carrot Cake Baked Oats with Cream Cheese Frosting

With this delicious breakfast cake, banana bread is outdated for now! It is not only super tasty and prepared quickly, but also without flour and refined sugar. The grated carrots provide the extra vitamin kick and the hazelnuts provide you with healthy fats. And aside from that It's cake for breakfast!

The trick that sets this Oatmeal Cake apart from regular Baked Oatmeal is the oat flour - so instead of using the rolled oats whole, you use a blender to grind them into a fine flour. This also creates the typical cake consistency.

You are completely free to choose your sweetener. I prefer date syrup, but if you prefer to use agave syrup or xylit or if you don't want to use any additional sweetener at all, that's no problem either.

So fire up the oven and let's go!

For one serving you need:


For the Carrot Cake:

  • 1 carrot

  • 50g rolled oats

  • 1 tbsp hazelnuts, ground

  • 1 tsp nut butter of your choice

  • 100 ml unsweetened vegetable milk of your choice

  • 1/2 tsp cinnamon

  • 1 tbsp date syrup (or any other sweetener)

  • 1/2 tsp baking powder

  • 1 pinch of salt

For the frosting (optional):

  • 1 tbsp. cream cheese, store-bought or homemade

  • A few squeezes of lemon juice

  • Some sweetener of choice (I used Xucker).

Else:

  • A rectangular baking pan (approx. 12x8cm)

  • some oil for greasing

  • some flour for dusting

  • Chopped nuts for sprinkling (optional)

Preparation:

  1. Preheat the oven to 180°C top / bottom heat.

  2. Peel the carrot and grate it finely.

  3. Put the rolled oats in a blender and grind them into flour.

  4. Then add date syrup, nut butter, baking powder, salt, cinnamon and plant milk and mix until smooth.

  5. Now stir in the grated carrots and the ground hazelnuts.

  6. Grease a small ovenproof dish, flour it and pour the cake mixture into it (at this point you can sprinkle the cake with chopped hazelnuts).

  7. Then let the Carrot Cake Oats bake for about 20 minutes.

  8. During this time, stir together all the ingredients for the frosting.

  9. When the cake is ready, you can either garnish it directly and spoon it out of the pan or flip it onto a plate.

  10. Spread frosting on the top and enjoy your healthy cake for breakfast.
