Vegan Banana Bread baked oats

The banana bread hype enters the next round!

There is hardly a thing that has experienced such a hype in the past year as the banana bread. With nuts, with chocolate, gluten-free or classic - no variation was left out. Now that baked oats are in all the rage, I figured why not combine the old hype with the new? Et Voila, may I introduce: Banana bread baked oats! Super moist, delicious and perfect for breakfast. And again, you can completely avoid refined sugar and flour in this treat.
For 2 servings you need:
For the banana bread:
1 banana, very ripe
100g oats
2 tsp. nut butter of your choice
280 ml unsweetened plant milk of choice
1/2 tsp. cinnamon
1 tsp. ground vanilla
1-2 tbsp. date syrup (or any other sweetener)
1 tsp. baking powder
1 pinch of salt
40g walnuts
Also:
2 oven-proof baking dishes (approx. 260ml capacity)
some oil for greasing
Preparation:
Preheat the oven to 350°F (180°C) top and bottom heat.
Add the plant milk, banana, cinnamon, baking powder, vanilla, salt, nut puree, date syrup and oats to a blender and blend until smooth.
Coarsely chop the walnuts
Grease 2 small ovenproof dishes and pour the cake mixture into it.
Then bake the Banana Bread Oats for about 20 minutes.
Garnish the finished oatmeal with fresh banana slices and nut puree.
