Carrot salmon has long been one of my favorite fish alternatives. Although there are now already some convenience products, but none could really convince me.
Another advantage is that this salmon alternative uses only a few ingredients and consists primarily of vegetables. So if I've got you on a healthier diet for this New Year, this recipe is perfect!
For about 4 servings you need:
For the carrot salmon:
500g carrots
1L water + 1 tbsp. organic wakame flakes from Sunday Natural*.
For the marinade:
1 tbsp. rice vinegar
2 tbsp. butter oil or olive oil
A few dashes of Liquid Smoke
2 tbsp. vegan fish sauce (alternative: soy sauce)
2 tbsp. organic wakame flakes from Sunday Natural*
1/2 tbsp. agave syrup
Preparation:
Peel the carrots and then cut them lengthwise into very thin strips.
Fill a pot with 1L water and add 1 tbsp. wakame flakes.
Heat the mixture and cook the carrot strips in a steamer over it for 5-10 minutes until they are soft, but still slightly firm to the bite.
Mix all the ingredients for the marinade together.
When the carrots are cooked, add them to the marinade and mix everything well.
Leave the carrot salmon to marinate overnight. Mix again and again
Enjoy!
