Vegan Cheese Sauce

Everything is better when covered with cheese! this also includes the vegan version.

For most people who want to switch to a vegan diet, the biggest hurdle is cheese. Opinions differ about the substitute products on the market. Of course, neither the alternative products nor homemade variants come close to a 100% of the usual cheese from cow's milk, but this recipe will convince you that this is not necessary. The cheese sauce is spicy, creamy and thanks to the secret ingredient tapioca starch even pulls real (cheese) strings!
In addition, it is a real all-rounder. Whether you want to use it to top casseroles or pizza, make a delicious mac 'n cheese, or simply use it as nacho sauce, this sauce is always the right choice.
And the best part is that you don't need a lot of ingredients or a lot of time to make it.
For a large portion (e.g. for topping casseroles and pizza) you need:
500ml unsweetened soy milk
3-4 tbsp. tapioca starch
4 tbsp. yeast flakes
3 tbsp. light miso paste (optional)
1 tbsp. cashew butter
1 tsp. garlic granules
1/2 tsp. turmeric
1/2 tsp. smoked paprika
1/2 tsp. mustard
1 tsp. salt
a few squeezes of lemon
Preparation:
Mix all ingredients except lemon in a saucepan.
Let the sauce come to a boil once and then continue to simmer over medium heat, stirring constantly, until the mixture thickens and begins to pull strings.
Season again with salt and add the lemon juice.
Now you can use the cheese sauce as you like.

Tip: The sauce is great for topping spinach noodle casserole, tofu mince pizza, as a filling for puff pastry or for mac 'n cheese, for example.
