Vegan Creme Cheese in three Variations

Vegan cream cheese is now available in all variations and designs. Almond, coconut or oat-based, with herbs, peppers or natural. However, the common supermarket products have one thing in common: they are quite expensive, don't necessarily have the best nutritional values and create a lot of packaging waste. So no cream cheese for all people who pay attention to sustainability? Wrong! . This recipe only requires a few natural ingredients and can be refined to you taste. The basis for the creamy treat is unsweetened soy milk and fresh lemon juice - ingredients that most vegans probably always have at home anyway :)

For about 270g (based on the basic mixture) you need:


For the basic mixture:

  • 1 liter of unsweetened soy milk

  • 1 lemon (the juice of it)

  • 1/2 tsp salt

  • 1 tbsp. cashew butter

  • 1 tbsp. yeast flakes

For the chive cheese:

  • 1 portion of basic mixture

  • 1 small clove of garlic

  • Chives (fresh or frozen)

For the Mediterranean cream cheese:

  • 1 portion of basic mixture

  • 8 black olives (Kalamata)

  • 3 semi-dried tomatoes

  • some tomato paste

  • 5 leaves of fresh basil

  • some black pepper

Preparation:

  1. Put the soy milk in a pot and let it boil once.

  2. Squeeze the lemon and add the juice to the simmering milk.

  3. Let the mixture boil again and then remove the pot from the heat.

  4. Let the milk set for about 15 minutes, until a solid mass has formed on the surface and the liquid is almost colorless.

  5. Pour the mass into a hair sieve and press out the liquid firmly.

  6. Allow the solid mass from the strainer to cool and then transfer it to a blender.

  7. Add salt, yeast flakes and cashew butter and blend until creamy. You can either leave the natural cream cheese as it is or fine tune it any way you like.

For the chive cheese:

  1. Add the garlic clove to the basic mixture in the blender and blend everything again.

  2. Then stir in the chives and season with salt if necessary.

For the Mediterranean cream cheese:

  1. Mix the base mixture with some tomato paste.

  2. Finely chop the olives and the dried tomatoes, as well as the fresh basil and mix it into the finished base mixture.

  3. Season the cream cheese with salt and pepper.
