Vegan Mac'n Cheese

Flavorful, tangy and simply melt-in-your-mouth. Vegan cheese sauce rocks!

Yes, you heard right. Today there is THAT soul food dish par excellence and completely without animal cruelty. Mac'n Cheese: Simple, no frills and the perfect dish for gray days (German June makes it possible).
The perfect cheesy flavor comes from my much-loved yeast flakes, for one. I also tried vegan cheese flavoring for the first time in my life. The smell is quite off-putting at first and reminds me a bit of a chemistry set, however, when cooked it unfolds a pretty natural aroma. However, I will do without it in the future.
But of course it's not just the cheesy taste that makes it so addictive, it's the consistency. That creamy, gooey, stringy piece of happiness (with any other dish, that consistency would make your toenails roll up). With mac 'n cheese, however, it can't be sloppy enough. Of course, since the cheese that normally provides this consistency isn't used in this recipe, it needs an equivalent substitute. And you can find one at the Asian grocery store, for example: Tapioca starch. Unlike other starches, tapioca not only thickens, but also develops such a chewy consistency that it actually pulls strings. Et Voilà, you have your cheesy consistency. So you don't have to spend time chopping and cooking vegetables like you do with other vegan mac 'n cheese recipes; you can whip up the perfect cheese sauce in a couple of minutes.
For 2 large servings you need:
250g short pasta (spirelli, maccharoni, spaetzle, or similar).
1 portion of vegan cheese sauce
some parsley to garnish
Preparation:
Cook the pasta in plenty of salted water.
Prepare the cheese sauce according to the recipe.
Add the cooked pasta to the sauce and mix well.
Taste again and serve immediately.
