Vegan Mashed Potatoes with Caramelized Pears & Nuts

Warming, filling dishes are especially important when the cold, dark season approaches. They are like a balm for the soul when it's stormy outside and you'd love to spend the whole day on the couch with tea and a blanket. This recipe is made for days like that. The creamy mashed potatoes are matched by crunchy nuts, spicy onions and fruity pear - a combination that couldn't be better!

The creamy mashed potatoes are matched by crunchy nuts, spicy onions and fruity pear - a combination that couldn't be better!
For 2 servings you will need:
For the mashed potatoes:
1,2 kg potatoes, floury boiling
60g vegan butter or margarine
120ml plant milk, unsweetened
herb salt, nutmeg
For the caramelized pears & nuts:
2 pears
2 red onions
60g nuts
20g vegan butter or margarine
2 tbsp. sugar
Preparation:
Mashed potatoes:
Peel 1.2kg of potatoes, cut them into rough cubes and boil them in plenty of salted water for about 20 minutes.
Then drain them and mash them with 60g butter and 120ml plant milk to mash. Then season with herb salt and nutmeg.
Caramelized mixed nuts:
Coarsely chop 60g of nuts.
Peel 2 onions and cut them into fine quarter rings.
Wash 2 pears, remove the core and cut them into small cubes.
Melt 20g butter with 2 tablespoons sugar in a pan and add pears, nuts and onion rings.
Let everything caramelize for about 5-6 minutes, stirring occasionally.
Serving:
Put the mashed potatoes on a plate and arrange the caramelized allsorts on top.
Enjoy!
