Vegan Muffins with Chocolate and Hazelnuts

Crunchy hazelnuts and bitter-sweet chocolate - simply an unbeatable combination!

Homemade muffins are always the right thing to do! When the scent of sweet pastries comes out of the oven and spreads throughout the kitchen, it's pure happiness. The mini cakes are suitable as party cakes for birthdays, weddings or even as a sweet gift. The flavor variations are pretty much unlimited! I have chosen a combination of sweet-tart chocolate and crunchy hazelnuts - a combination that you absolutely can not go wrong with.
But of course you can vary the basic dough freely. Nuts, dried fruit, different types of chocolate - let your imagination run wild!
For 12 muffins you need:
For the basic batter:
300g flour
125g sugar
1 pinch of salt
some ground vanilla
1 pck. cream of tartar baking powder
2 tbsp. applesauce
100ml oil
150ml sparkling water
Also:
80g hazelnuts
100g chocolate chunks
Preparation:
Mix flour, sugar, salt, ground vanilla and baking powder well.
Then stir in the applesauce.
Mix the oil and water together and add to the batter, stirring quickly.
Chop the hazelnuts coarsely and fold them into the batter together with the chocolate.
Bake the muffins at 180°C convection oven for approx. 20 - 25 min.
