Delicious leftover use in fast food style!

Burgers made from banana peels? You heard right! With the right marinade, the leftovers that would otherwise end up in the organic waste can be turned into a delicious burger. Make sure you buy organic bananas, as their peel is not sprayed and therefore suitable for consumption. If possible, the peel should not have any brown spots yet. I had the best experience with the skin already yellow, but the stalk was still slightly green. You can either eat the pulp immediately or use it for example for Banana Bread Baked Oats.
Whether you make the burger buns and the barbecue sauce yourself or buy them is entirely up to you. But for me, homemade burgers are always a real highlight, so I dedicate a lot of time to it and try to make everything myself.
If it must go quickly, the purchased variant is just as good ;)
For 4 burgers you need:
For the marinated banana peels:
4 large organic bananas, yellow with a light green stalk
1 tbsp. tomato paste
1 tsp. mustard
2 tbsp. agave syrup
1 tbsp. soy sauce
1 tbsp. Worcester sauce
1 tbsp. apple cider vinegar
1 tbsp. smoked paprika
1 tsp. garlic powder
1/2 tbsp. chili flakes
a few dashes of Liquid Smoke
For the sautéed onions:
4 onions
2 tbsp. agave syrup
2 tbsp. dark balsamic vinegar
1 tbsp. oil
salt, pepper
Other:
vegan BBQ sauce, purchased or homemade
Preparation:
Prepare the burger buns according to the recipe.
If you want to make the BBQ sauce yourself, prepare it according to the recipe as well.
For the Pulled Banana Peels, wash the bananas with hot water and peel them.
Remove the white parts from the peel with a spoon and then shred the peels with a fork until they look like pulled pork.
Mix all the ingredients for the marinade and mix it with the mushrooms.
Let the pulled banana peels marinate in the refrigerator for at least 4 hours.
Heat 1 tablespoon of oil in a frying pan and fry the banana peels until crispy.
Heat the oil in a frying pan for the stewed onions.
Peel the onions and cut them into half rings.
Put them in the pan, pour the agave syrup over them and fry them for about 5 minutes.
Then deglaze them with the balsamic vinegar and let them steam for another 3 minutes with the lid closed.
Season with salt and pepper last.
Assembling:
Cut the buns in half and toast the inside.
Brush the bottom with some BBQ sauce, add the banana peels and lastly the sautéed onions.
Put the lid on last.
