Vegan Pulled Mushroom Burger

Fluffy burger buns, delicious marinated mushrooms and crunchy coleslaw - it doesn't get any better than this!

Pulled mushrooms are something I've wanted to try for ages. Unfortunately, every time I went to the supermarket I was faced with empty shelves of king oyster mushrooms. Thanks to a friendly employee in the grocery store of my choice, I was able to reserve two packs and finally try my long-planned Pulled Mushroom Burger.
Visually, the mushrooms already have an extreme resemblance to pulled meat and they also have a lot to offer in terms of taste. The consistency, however, is a bit firmer.
Nevertheless, this burger is a real taste highlight! And from the fluffy brioche buns to the crunchy coleslaw salad, everything is homemade. So spare a day and send you and your loved ones to burger heaven.
For 4 burgers you need:
For the Pulled Mushrooms:
300g king oyster mushrooms
1 tbsp tomatoe paste
1 tsp mustard
1 tsp tomato paste
2 tbsp agave syrup
1 tbsp oil
1 tbsp. soy sauce
1 tbsp. Worcester sauce
1 tbsp. apple vinegar
1 tbsp. smoked paprika
1/2 tbsp. chili flakes
a few squeezes of Liquid Smoke
For the Cole Slaw:
1 small white cabbage
4 carrots
1 tbsp. mustard
5 tbsp. oil
4 tbsp. apple cider vinegar
2 tbsp agave syrup
salt, pepper
Other:
vegan BBQ sauce, store-bought or homemade
Preparation:
Prepare the burger buns according to the recipe.
If you want to make the BBQ sauce yourself, prepare it according to the recipe as well.
For the coleslaw, peel the carrots and grate them finely.
Remove the outer leaves of the white cabbage, quarter it and remove the stalk. Then cut it into very fine strips.
Mix mustard, vinegar, oil, agave syrup, salt and pepper to a dressing and put it in a bowl with the carrots and the white cabbage.
Now mix and knead everything really well for a few minutes with clean hands. Here you can use a lot of force and crush the cabbage between your fingers.
Afterwards, the Cole Slaw should be left in the refrigerator for at least 30 minutes.
For the Pulled Mushrooms, clean the mushrooms and shred them with a fork until they look like pulled pork.
Mix all the ingredients for the marinade and mix with the mushrooms.
Let the Pulled Mushrooms marinate in the refrigerator for at least 4 hours.
Heat 1 tablespoon of oil in a skillet and fry the mushrooms until crispy.
Assembling:
Cut the buns in half and toast the inside.
Spread some BBQ sauce on the bottom, add the mushrooms and the coleslaw.
Put the lid on last.
