Asian taste explosion par excellence!

Vegan Sticky Tofu Noodles

I love Asian food! Throw a few ingredients in the wok or pan, season with soy sauce, ginger, garlic, chili and various Asian spices of your choice - ready! Add aromatic basmati rice, glass noodles, soba noodles or ramen noodles and you have an incredibly delicious dish that is bursting with flavors!

Today's dish is extra fancy because the use of cornstarch gives the tofu and sauce a very special consistency - beware, you may get addicted! Classics such as ginger, soy sauce, rice vinegar and chili provide the variety of flavors. Tahini makes it extra creamy, and lime juice and agave syrup add a delicious sweet and sour note to the dish.

For 3 - 4 people you need:


For the Sticky Tofu:

  • 200g plain tofu

  • 1 tbsp. cornstarch

  • 1 tbsp. sesame oil, for frying

For the sauce:

  • 10 tbsp. soy sauce

  • 3 tbsp. agave syrup

  • 1 tbsp. tahini

  • 1 lime

  • 2 tbsp. rice vinegar

  • 1 chili pepper

  • 1 garlic clove

  • 1 piece of ginger, the size of a thumb

Other:

  • 200g soba noodles

  • 300g broccoli, frozen

  • 1 tablespoon sesame seeds

Preparation:


Sticky Tofu:

  1. Take 350g broccoli out of the freezer and let it thaw a bit.

  2. Squeeze 200g of tofu well between two layers of kitchen roll and then cut it into cubes.

  3. Put the tofu cubes in a bowl, sprinkle them with 1 tbsp of cornstarch and mix everything well.

Sauce:

  1. Squeeze the lime.

  2. Peel and chop a thumb-sized piece of ginger and the 1 clove of garlic.

  3. Wash the chili pepper and cut it into coarse rings (if you like it less spicy, remove the seeds first).

  4. Mix lime juice, ginger, chili, garlic, 10 tbsp. soy sauce, 3 tbsp. agave syrup, 1 tbsp. tahini and 2 tbsp. to a homogeneous mass.

Combine:

  1. Cook the soba noodles according to package directions.

  2. Heat 1 tablespoon of sesame oil in a frying pan and fry the tofu until crispy on all sides.

  3. Then add half of the sauce and continue frying the tofu until the sauce has thickened.

  4. Cook the broccoli for about 5 minutes so that it still has bite.

  5. Drain the finished noodles and return them to the pot with the other half of the sauce.

  6. Let everything come to a boil again so that the sauce thickens.

  7. Arrange the noodles with the tofu and broccoli in a deep plate and sprinkle with sesame seeds if desired.
