Vegan Whippet Cookies

Whippet Cookies, chocolate-covered marshmallows, Dickmann's - Whatever you call them, these fluffy things with crunchy chocolate and crispy wafer base are something we already loved when we were kids. The classic at every kid's birthday party: biting off the wafer base and pressing the (mini) marshmallow fluff on your nose :D

Unfortunately, the originals with powdered egg whites aren't exactly vegan-friendly. But the good news is that you can now easily make the fluffy treat yourself. And without using gelatinizers and without having to first boil sugar syrup. The secret ingredient: guac gum! It thickens even cold dishes and, in combination with whipped aquafaba, ensures this incomparably foamy and airy consistency. You don't have to bake the wafer base yourself either. The crispy bread Filinchen (unpaid brand mention) is the perfect alternative in terms of taste and feel. But beware! Only the variety "vital" is vegan!

So you can make your own foam kisses with only 5 ingredients (aquafaba, sugar, gua gum, filinchen and dark chocolate coating) and without much effort.

For about 16 Whippet Cookies you need:


For the marshmallow fluff:

  • 150 g sugar

  • 1 can of chickpeas (of which the liquid)

  • 1 teaspoon of gua gum, level

For the coating:

  • 500g dark couverture

Other:

  • 8 slices of sweet crispbread (e.g. Filinchen).

  • Round cookie cutter (approx. 8 cm Ø)

  • piping bag and nozzle

Preparation:

  1. Cut out 16 circles from the crispbreads and set aside for later.

  2. Beat the aquafaba with a pinch of salt until fluffy.

  3. Add the gua gum, stirring constantly.

  4. Continue beating the mixture while letting the sugar drizzle in.

  5. Continue beating on high speed for about 5 minutes until the mixture is firm and glossy.

  6. Fill the aquafaba mixture into a piping bag with a nozzle and pipe it onto the crispbreads.

  7. Then put the naked marshmallows in the freezer for an hour (otherwise they will melt immediately when you pour the chocolate coating over them).

  8. Melt the dark chocolate coating in a water bath.

  9. Take the foam kisses out of the freezer and then carefully pour the chocolate coating over them.

  10. Let the whippet cookies cool in the refrigerator.
